What does it provide? Naturally gluten-free ancient grain — the world's smallest grain (≈ 0.9 mm). High iron content (7.6 mg/100 g dry — 42% of adult women's daily requirement; though non-heme), high calcium (180 mg/100 g — a record among grains), high manganese, B-complex, and a complete essential amino-acid matrix (lysine content is high relative to other grains).
How much? 50—80 g cooked teff or 1—2 injera (Ethiopian spongy bread) / day. The ETB and EU have approved it as a gluten-free grain since 1991.
When to avoid? In celiac disease, certified "gluten-free" labeling is required (cross-contamination risk). Hemochromatosis (iron overload). Hyperoxaluric kidney stones.
Teff is Ethiopia's and Eritrea's ancient staple grain — cultivated for more than 5000 years. The classic Ethiopian injera (spongy, fermented sourdough flatbread) is the product of teff flour and the Eragrostis tef-fermenting microbiota (LAB + yeast). A miniature grain adapted to the climate of the Ethiopian highlands (1500—2400 m) — one gram can contain up to 3000 seeds. After the 1991 Vavilov Institute Ethiopian collection it entered the European gluten-free market, and in the 2010s the "ancient grain" movement rediscovered it in Hungary as well.
Scientific Background
Teff is naturally gluten-free — the prolamins of the endosperm are not active in the celiac immune response (Baye 2014 EFSA Supporting Publications official assessment). A 100 g serving of cooked teff covers 28—42% of the adult daily iron requirement (variety- and cultivation-source-dependent).
The fiber matrix (8 g/100 g, predominantly insoluble) is a butyrate substrate. The calcium content (180 mg/100 g) is among the highest among grains — teff-injera classically supported the bone health of dairy-free, calcium-deficient populations. Glycemic index is low-to-moderate (≈ 57), making it an alternative for T2D patients in place of classic high-GI gluten-free flours (rice, corn).
The fermented injera (3—5 day LAB-yeast fermentation) provides a prebiotic + postbiotic matrix. The Ethiopian population's relatively low celiac disease prevalence is partly attributed to the teff-dominant diet (Catassi 2014 Ann Intern Med).

- High dairy quantity: calcium may inhibit iron absorption.
- High-lime-content water: not relevant, but traditional Ethiopian water is soft.
- Celiac disease (confirmed celiac diagnosis): only with certified "gluten-free" labeling — cross-contamination risk.
- Hemochromatosis: moderate intake due to high iron content.
- Hyperoxaluria + kidney-stone tendency: moderate oxalate content, monitoring.
- Diabetes with insulin pump: low GI is safe, but glycemic monitoring recommended.
- Infants under 6 months: grains generally have low allergen risk, but not green-zone.
